Healthy Strawberry Apple Pie


Pie Crust:

6 tbs butter, cut into small pieces

1 1/2 cups of flour (I like to use half white, half whole wheat)

about 4 Tbs. cold water

Crumble:

1/3 cup whole wheat flour

½ cup walnuts

1/4 cup or a handful of oats

1 tbsp maple syrup or brown sugar

1 tbsp coconut oil

1 tbsp butter

a splash of vanilla

If this turns out to be too little you can add ingredients accordingly

Filling:

3 medium apples (i like to buy the mixed apple bags from the farmers market)

1 lb of strawberries (or about a pound)

1 tsp cinnamon

1/2 tsp ginger powder

splash of lemon juice

optional: 1 tsp brown sugar

Instructions:

To make the crust begin by cutting the butter into small pieces then add to the flour. Slowly mix in water and work the dough with your hands until the mix becomes solid and unified. Wrap in plastic wrap and let sit in the fridge for half hour minimum.

While the crust sits prepare the crumble by adding coconut oil or butter to a pot and bring it to a melt. Add maple syrup and stir. Add flour, oats, nuts and vanilla to the mix and stir well. Let sit.

Pre heat oven at 350F.

Cut up the apples and strawberries in even slices (not too thin). Add cinnamon, ginger and lemon (and sugar if you choose to go there) and stir together.

When all is ready ready spread the crust on a 9 inch buttered pie plate(I use coconut oil) . Bake the crust for 5 minutes.

Add the fruit mix to the pie and cover with the crumble. Bake for about 30-40 minutes on 350F.
