Healthy Ramen

Serves 3 or 4 people

4 cups water

1 cup chopped bock choy

½ carrot, julienned

2 thinly sliced green onions

6 shitake mushroom sliced

1 garlic clove

1 tsp avocado oil

1 tbsp miso paste

1 tbsp better then broth paste

2 bunches of soba noodles

1 tsp toasted sesame oil

A handful of cilantro leaves

Broth:

Add water to a medium size pot, bring water to a boil. Meanwhile add avocado oil to a pan and heat; slice the garlic and shitake mushrooms. Let cook on medium heat until brown.

Slice all the other vegetables. When water comes to a boil, lower to simmer and add broth paste and soba noodles. Let cook for 2 minutes then add bock choy and carrots. Cook until soba noodles are ready (about 5 minutes). Turn off flame and add miso, stir until diluted, then proceed to add shitake, garlic, green onions, and toasted sesame oil.

Serve with a few cilantro leaves.
