Fennel Leek Soup

Simple and delicious...

Ingredients:

5 tbsp olive oil 2 fennel heads 2 leeks 1 turnip 2 garlic cloves 2 tsp fennel seeds 2 tbsp miso paste 6 cups water 1 veg broth cube

Directions:

Add olive oil, thinly sliced leeks, turnips and fennel heads to a medium size pot, and let them simmer until soft. Proceed to add sliced garlic and fennel seeds into the mix, stir and simmer for about 5 minutes. While that is going, use a small pot to warm up 6 cups of water with the veg cube and miso paste, stir until all blends in, then transfer over to the medium pot. Cover and bring it to a boil on medium heat. Once the water is boiling turn down the flame to a low simmer, and let cook for about 20 minutes.

Once that is done blend it all together and add some chives or parsley on top. I added some paprika to it too because I love spicy food.
